		<description>Questions..from Snohomish County.. this is great info. Who did the design, who built it, how much does it cost to use?? Could a farmer build this and just have is more or less stationery at their own farm.? Does the USDA inspector have to be site during the processing?  We do USDA cows and pigs, sheep and the USDA inspector comes with the unit.
I would appreciate more info

Rabbit Processing falls under the same rules as those for chickens.  You need an approved facility and a food processing license.  If you store the processed rabbits you will need a separate freezer.  Once processed you can sell anywhere in the State--farmers markets, coops and grocery stores, resturants, and directly to the public.</description>

This is a great resource for our magnet high school Culinary Arts class and we would like to see if we could get many more copies of your manual and perhaps any electronic resources you may turn us on to for our classes.
